Mediterranean Turkey Patties

Ingredients (Makes 7 small patties):

  • 1 lb. ground turkey

  • 1 small yellow onion (or half a large onion), finely chopped or grated

  • 1 egg

  • 1/2 cup plain bread crumbs

  • 1/2 cup parsley leaves, chopped

  • 1 tsp ground cumin powder

  • 1/2 tsp salt

  • ~1/4 cup avocado oil for cooking

Instructions:

  • Combine all ingredients except avocado oil in a large bowl. Mix with your hands until well combined.

  • Form into desired size patties. I made about 7, 1/4 inch thick patties. You want to make sure they are not too thick so they will cook throughout.

  • Heat avocado oil in a medium/large non-stick skillet. When hot, add half the patties (so they have enough room to cook). Cook for ~3 minutes on each side to get a nice brown color. Then cover the skillet with a lid, reduce the heat to low and cook for another 5 minutes. Check that the internal temperature of the patties are at least 165° F before removing from the pan. Cook the remainder fo the patties in the same manner.

  • Recommend serving with salad, toasted pita and green tahini sauce dipping. Some people also like to add a little hot sauce such as sriracha or chili-garlic sauce. Enjoy!
