Tropical Green Smoothie

This is my all time favorite smoothie. This recipe is inspired by a smoothie called “Ginger Greens” from E+Rose, a Nashville local wellness cafe. A quick tip on ginger: you can throw a small piece of ginger into a blender if your blender is powerful enough but what I usually do is keep my ginger in the freezer and grate it with a microplane. Ginger stays good in to freezer for a couple months (up to 6).

Ingredients (Makes 1 serving):

  • 1/2 cup coconut water

  • 1/4 cup pineapple juice

  • 1/2 cup frozen peaches

  • 1/2 cup frozen mangoes

  • 1/2 cup kale or spinach

  • 1 Tbs fresh mint

  • ~1 Tbs fresh ginger

  • 1 scoop unflavored protein powder (optional)

Instructions:

  • Combine all ingredients into a blender. Blend until smooth.

The blender I use is a Vitamix. I was skeptical if I needed one for a long time but so far it has been amazing. Such a game changer for making smoothies and sauces!
