Figgy Oatmeal
I love making this oatmeal on the weekend and saving it for the week's breakfast. Super simple and quick to make. I don't always have figs so you can opt out or add a different fruit! You can also swap out the walnuts and cashews for whatever nuts you prefer as well.
Ingredients:
Coconut oil spray
1 banana, mashed
2 eggs, beaten
3 Tbs maple syrup
2 Tbs unsalted butter, melted
4 dried figs, diced
3/4 cup almond milk
1/2 tsp vanilla extract
4 Tbs walnuts, chopped
4 Tbs cashews, chopped
1 Tbs chia seeds
1 tsp. baking powder
1 tsp. cinnamon
1 1/2 cups oatmeal
3-4 fresh figs, sliced thin (optional)
Instructions:
Preheat oven to 350 degrees F.
Spray pie dish with coconut oil spray or whatever oil you prefer.
Mix ingredients in order listed except the fresh figs.
Bake for 25 minutes.
Add fresh figs on top.
