Figgy Oatmeal

I love making this oatmeal on the weekend and saving it for the week's breakfast. Super simple and quick to make. I don't always have figs so you can opt out or add a different fruit! You can also swap out the walnuts and cashews for whatever nuts you prefer as well.

Ingredients:

  • Coconut oil spray

  • 1 banana, mashed

  • 2 eggs, beaten

  • 3 Tbs maple syrup

  • 2 Tbs unsalted butter, melted

  • 4 dried figs, diced

  • 3/4 cup almond milk

  • 1/2 tsp vanilla extract

  • 4 Tbs walnuts, chopped

  • 4 Tbs cashews, chopped

  • 1 Tbs chia seeds

  • 1 tsp. baking powder

  • 1 tsp. cinnamon

  • 1 1/2 cups oatmeal

  • 3-4 fresh figs, sliced thin (optional)

Instructions:

  • Preheat oven to 350 degrees F.

  • Spray pie dish with coconut oil spray or whatever oil you prefer.

  • Mix ingredients in order listed except the fresh figs.

  • Bake for 25 minutes.

  • Add fresh figs on top.
