Cashew Butter Bars
My favorite candy is hands down Reese’s peanut butter cups. I was really craving them, so attempted to make something similar. I really like using cashew butter for this because it gives such a nice creamy texture. Make sure to keep these bars in the fridge until you are ready to enjoy them because they tend get melty at room temperature! I hope you enjoy!
Ingredients (Makes 9 bars):
2 containers of salted creamy cashew butter (16 oz. each, I get mine from Trader Joe’s)- You can also use just 1 container of cashew butter for a thinner end result.
2/3 cup coconut flour
1/4 cup maple syrup
1 Tbs cinnamon
1 cup semi-sweet chocolate chips
Coconut oil spray
Instructions:
Spray an 8x8 dish with coconut oil (or cover with parchment paper)
In a medium bowl, mix together the cashew butter, coconut flour, maple syrup and cinnamon. If cashew butter was unsalted, also add a dash of salt.
Transfer cashew butter mixture to the 8x8 dish.
In a small microwave-safe bowl, add chocolate chips. Microwave in 20-30 second increments, stirring in between until smooth (mine took about 90 seconds). Spread melted chocolate evenly over the cashew butter mixture.
Place in the fridge to harden for at least 2 hours.
Cut and enjoy! Store in the fridge.
