Blue Spirulina Chia Pudding

I found this recipe in Thrive Magazine, AGAIN… if you haven’t checked it out before I highly recommend it! This was a feature by Kelsey Riley, her website is Planted in In The Kitchen and her instagram features lots of beautiful, colorful plant-based eats!

Blue spirulina is such a fun ingredient. It is a blue-green algae that grows in ponds, lakes and alkaline waterways. It’s vivid blue pigment, caused by Phycocyanin makes it a natural blue food dye. Blue Spirulina does not have a fishy taste, unlike green spirulina. I got mine at Terrasoul.com.

Ingredients:

  • 1 cup vanilla almond milk, unsweetened (or any other milk you like)

  • 1/4 cup chia seeds

  • 1 teaspoon maple syrup

  • 1/2 teaspoon blue spirulina powder

  • 1/4 teaspoon vanilla extract

Instructions:

  • Mix all of your ingredients in a small bowl.

  • For the first 10 minutes, return to the pudding every couple minutes to stir again, otherwise the chia will settle to the bottom. Once the chia stays in suspension. cover and refrigerate for at least 2 hours.

  • Add your favorite toppings, eat by itself as a snack or dessert or add to a smoothie or oatmeal!
