I think we have all been in the situation when we are reallyyyy craving something sweet. Look in the pantry, nothing. Look in the fridge, nothing. Look to make cookies, no flour or other ingredients. This desperate situation lead me to discover this 3 ingredient peanut butter cookie using ingredients almost every house always has on hand. Literally the easiest cookie recipe of life. You won't even notice you are missing anything. I actually thought to myself, "why do other recipes have so many ingredients???" This recipe makes about 8 large cookies.

Ingredients:

  • 1 cup crunchy peanut butter (smooth works as well)

  • 1 cup sugar

  • 1 egg

Instructions:

  • Preheat oven to 350 degree F.

  • Line baking sheet with parchment paper.

  • Combine ingredients.

  • Scoop each cookie (about a heaping tablespoon each) onto baking sheet.

  • Using a fork press down on the cookie gently to flatten. To make the traditional pattern, press the fork in the opposite direction to make a crisscross pattern.

  • Bake for 10-12 minutes until set. Allow cookies to cool for about 5 minutes before moving to a cooling rack. Let sit there for about 10 more minutes.

  • Enjoy!
