Easy Pesto Chicken

I make this dish a few times a month because it is so easy and quick for a weeknight dinner. I’ve served it with salad and gnocchi, rice or pasta. I’ve also just eaten it plain with extra tomatoes on the side. I always have a container of pesto in my fridge or freezer. I like to buy mine at Costco, but you can really get it anywhere or if you are feeling really fancy you can make it yourself! I have included instructions to air fry or oven roast your chicken. Enjoy!

Ingredients (Makes 4 servings):

  • 2 chicken breasts

  • 4 slices provolone cheese or cheese of choice

  • Pesto of your choice

  • 1 cup cherry tomatoes, sliced in half

  • 1 lemon, juiced

  • Avocado oil spray or other cooking oil

  • Pinch of salt and pepper

Instructions:

  • Slice chicken breasts lengthwise making 4 thinner pieces.

  • Spray each side with avocado oil and sprinkle with salt and pepper.

  • Air fry at 400 degrees F for 16-18 mins, flipping half way through. If you do not have an air fryer, you can roast in the oven at 425 degrees F for 18 minutes. Either method, chicken needs to reach an internal temperature of 165 degrees F.

  • Meanwhile, in a small bowl combine sliced tomatoes, lemon juice and a sprinkle of salt. Set aside.

  • Once chicken is done. Top each piece with cheese, a dollop of pesto then tomatoes.

  • Recommend serving with salad and rice or pasta.
