Strawberry Shortcake Bites (No Bake)

These are seriously so easy! They taste really similar to strawberry shortcake, I might prefer these over the real deal! I found dried strawberries at Target and I believe Trader Joes might carry them as well. Make sure they are not freeze dried though!

Ingredients (Makes approximately 16 balls):

  • 1 cup or ~10 dates (Pitted. If they are really hard, soak in warm water for 10 minutes, then drain well)

  • 1/2 cup dried strawberries (mine were sweetened)

  • 1/2 cup raw cashews

  • 1/2 cup raw macadamia nuts

  • 1/2 tsp vanilla extract

  • 2 fresh strawberries, halved

  • ~1/3 cup sweetened coconut flakes for coating outside (optional)

Instructions:

  • Pulse dates and dried strawberries in a food processor until they’re in small pieces or a ball forms.

  • Add cashews, macadamia nuts, vanilla extract and fresh strawberries. Pulse until combined.

  • Carefully roll into 1-inch balls (about the size of golf balls), using the warmth of your hands to mold them together.

  • Pulse the remaining 1/3 cup coconut flakes in a blender or the food processor. Dredge the outside of the balls with the coconut flake powder.

  • To set, place in fridge or freezer for 15 minutes. Will keep fresh in an air-tight bag or container for up to a week. Enjoy!
