Strawberry Shortcake Bites (No Bake)
These are seriously so easy! They taste really similar to strawberry shortcake, I might prefer these over the real deal! I found dried strawberries at Target and I believe Trader Joes might carry them as well. Make sure they are not freeze dried though!
Ingredients (Makes approximately 16 balls):
1 cup or ~10 dates (Pitted. If they are really hard, soak in warm water for 10 minutes, then drain well)
1/2 cup dried strawberries (mine were sweetened)
1/2 cup raw cashews
1/2 cup raw macadamia nuts
1/2 tsp vanilla extract
2 fresh strawberries, halved
~1/3 cup sweetened coconut flakes for coating outside (optional)
Instructions:
Pulse dates and dried strawberries in a food processor until they’re in small pieces or a ball forms.
Add cashews, macadamia nuts, vanilla extract and fresh strawberries. Pulse until combined.
Carefully roll into 1-inch balls (about the size of golf balls), using the warmth of your hands to mold them together.
Pulse the remaining 1/3 cup coconut flakes in a blender or the food processor. Dredge the outside of the balls with the coconut flake powder.
To set, place in fridge or freezer for 15 minutes. Will keep fresh in an air-tight bag or container for up to a week. Enjoy!
