Parmesan Broccoli
This is by far my favorite way to eat broccoli. You can also do this with a mix of cauliflower and broccoli or just cauliflower instead of broccoli. Every single person who has eaten this has enjoyed it. You might never want to eat broccoli any other way again! In this recipe, you will parboil the broccoli then bake it with the cheese mixture. The end result is the most perfect texture broccoli with a golden cheese crust. Make sure not to overcook the broccoli in the first step or else the end result will be mushy, but honestly it will still be delicious.
Ingredients (serves 4):
1 large or 2 small heads of broccoli, cut into florets
3/4 cup mayonnaise (my favorite is Hellmann’s brand)
1/2-3/4 cup Parmesan cheese (I like grated best)
Instructions:
Preheat oven to 400°F.
Start by filling a large pot about half way full with cold salted water. Bring to a boil.
Meanwhile, in a small bowl, mix the mayonnaise and Parmesan cheese.
Once the water is boiling, add the broccoli and boil for just 2 minutes. You don’t want to overcook or else the end result will be mushy.
Drain broccoli then add to a 8 or 9 inch baking dish. I like to arrange the broccoli all with the tops up so that there will be more surface area for cheese!
Spread the cheese mixture over the top of the broccoli tops.
Bake until top is golden brown, about 15-18 minutes.
