Hearts of Palm Ceviche

This recipe came from The Blue Zones Kitchen Cookbook. It is a recipe from the blue zone of Nicoya, Costa Rica. I have tried most of the recipes in this cookbook and LOVE THEM ALL! I can't recommend it enough. I love real ceviche, but was curious about hearts of palm ceviche. It is crazy how similar the texture of hearts of palm is to fish and the flavor is spot on. It’s so easy to make!! I will be making it today for the SuperBowl.

Ingredients (Makes 3 servings):

  • 1 can whole hearts of palm, drained and thinly sliced rounds

  • 1/3 sweet onion (like Vidalia), diced

  • 1 red bell pepper, diced

  • 1/2 habanero pepper, seeded and minced (more or less to your liking)

  • 1-2 Tablespoons fresh cilantro, chopped

  • 1-2 limes, juiced

  • 1 teaspoon kosher salt

Instructions:

  • Combine all ingredients in a medium bowl.

  • Adjust habanero amount to your desired spice level. Adjust salt and lime to your preference.

  • Serve with chips!
